IWFS Black Pudding Competition
Sponsored by The Bury Black Pudding Company and organised by IWFS North.
Welcome to the International Wine and Food Society’s first ever Black Pudding Competition!
From the breakfast plate to the gourmet dining table, the IWFS North competition was designed to introduce catering students to the culinary potential and flexibility of the humble black pudding.
Students from 6 colleges in the North – Blackpool, Bolton, Middlesborough, Scarborough, Sheffield, and Warrington & Vale Royal- have competed in the first-ever black pudding competition for catering students. The final took place at Warrington & Vale Royal College on Wednesday 25th May.
The winners were announced at a formal ceremony at Bolton College on June 28th 2022 and awards were presented to the top three entrants
Contestants, judges, staff from the catering colleges, and guests from the Northern branches of the International Wine and Food Society gathered to celebrate the competition winners. All were served a magnificent meal prepared by staff and students from Bolton College.
Our IWFS philosophy is to inspire and promote the creation of great food and great ideas. Through this unique collaboration of leading Northern catering colleges, chefs, and industry suppliers across the North, our competition offers a chance to all students to work with amazing ingredients and have guidance from professionals who share the enjoyment of creating unique food experiences.
The event, which has been organised by four IWFS branches in the North, and generously sponsored by The Bury Black Pudding Company, has also involved five top Northern chefs as judges, including two with Michelin stars. Students were asked to create a recipe for a starter or main course using black pudding as the key ingredient.
Who are the Judges? Let’s introduce them, including two Michelin star chefs.
Additionally, fellow judges in the black pudding competition were IWFS representatives and Matthew McDermid of Bury Black Pudding Company.
We’ve been running localised heats at colleges across the north of England this spring and Summer. Students were asked to create a recipe for a starter or main course using black pudding as the key ingredient.
